Prepare a nourishing soup packed with vitamins to enhance your digestive system.

Ingredients
200g udon noodles
1 TB Spiral foods hatcho miso paste
2 cups of water
2 sachets of Spiral foods dashi stock
1 TB Spiral foods shoyu sauce
25g Spiral foods shiitake mushrooms, sliced
2 sprigs of shallots sliced
Small handful of chopped coriander for garnish
Method
Boil the udon noodles for 8 minutes and drain
Pour the water into a saucepan, add the dashi stock and bring to a light simmer
Mix the miso paste with some water and whisk to combine, add to the broth
Add the shoyu sauce
Add the shiitake mushrooms and simmer for 5 minutes or until the mushrooms soften
Divide the noodles in bowls
Pour the broth and shiitake mushrooms
Sprinkle the shallots and coriander
Garnish with sesame seeds or Spiral foods furikake
