Vegan miso broth with udon noodles & shiitake mushrooms

Ingredients


  • 200g udon noodles

  • 1 TB Spiral foods hatcho miso paste

  • 2 cups of water

  • 2 sachets of Spiral foods dashi stock

  • 1 TB Spiral foods shoyu sauce

  • 25g Spiral foods shiitake mushrooms, sliced

  • 2 sprigs of shallots sliced

  • Small handful of chopped coriander for garnish



Method


  1. Boil the udon noodles for 8 minutes and drain

  2. Pour the water into a saucepan, add the dashi stock and bring to a light simmer

  3. Mix the miso paste with some water and whisk to combine, add to the broth

  4. Add the shoyu sauce

  5. Add the shiitake mushrooms and simmer for 5 minutes or until the mushrooms soften

  6. Divide the noodles in bowls

  7. Pour the broth and shiitake mushrooms

  8. Sprinkle the shallots and coriander

  9. Garnish with sesame seeds or Spiral foods furikake

  10. Tashimu!
