Dashi broth with soba noodles and greens

Enjoy this quick, heart warming soup for any busy night of the week.

Ingredients


  • 200g Spiral foods buckwheat soba noodles

  • 10 peeled, cooked prawns

  • 2 sachets Spiral foods dashi stock

  • 2 cups water

  • 1 TB Spiral foods shoyu sauce

  • 2 tsp Spiral foods sesame oil

  • 3 leaves bok choy, chopped

  • 3 leaves chinese spinach, chopped

  • 1 fresh red chilli, sliced



Method


  1. Boil the soba noodles for 8 minutes and drain

  2. Bring the water and dashi stock to a low boil

  3. Add the shoyu, sesame oil and chilli

  4. Add the prawns and simmer for a few minutes

  5. Add the greens

  6. Divide the soba into a bowls

  7. Add the broth, prawns and greens

  8. Garnish with sesame seeds or Spiral foods furikake

  9. Tashimu!
